Nougatine

This is a French sweet made of hard caramel and nuts.

I only do the almond version as I am not a big fan of other nuts.

Ingredients
1 table spoon of butter
5 table spoons of sugar
1 tea spoon of milk
1 cup of almonds ( grilled is better , they can be full, or other shapes work very well too)



Put the almonds on a non stick sheet

In a pan combine the sugar and butter and put on the stove medium heat and stir non stop (it is head but really worths it)
Keep stirring. The butter melts then it makes like a send with the sugar then it turns harder and harder, here reduce the heat, and keep stirring. It starts slowly to caramelize. It is very important to keep stirring to avoid it to burn. When it becomes camel color then pore it on the almonds sheet to recover all the almonds. Let it cool down. You can use it like it is as a candy, grind it and use it on the top of ice-cream, mix it with chocolate and stuff a chocolate cake with it, put it on the top of the cream of a cake what ever you use it for it is a winner.
